56 Gram’s (2 ounces) edible raw cacao butter, chopped
2 tablespoons (24 g) non-hydrogenated vegetable shortening*
1 1/2 teaspoon (8 g) smooth natural cashew butter (almond butter is fine, too)
1/2 cup (57.5) g) confectioner’s Swerve
1/8 teaspoon kosher salt
1/2 teaspoon pure vanilla extract

*You can replace the shortening with an equal amount, by weight, of cacao butter. The resulting white chocolate is much richer.

In a medium-sized Double Boiler place the cacao butter and shortening. Heat till cacao butter and shortening has melted, stirring occasionally. The mixture will be thin.
Add the confectioner’s sugar, mix till dissolved, then add salt and vanilla, and mix until smooth. Transfer the mixture to a bowl for pouring.
Pour the mixture into silicone molds for about 1hr, or until solid. Remove from the molds and serve.
